Ourea is the first restaurant of the couple Matthieu Roche and Camille Fromont , and for me, one of the best contemporary restaurants in Marseille. Next to the old port and the court, Matthieu in the kitchen assisted by Kim-Maï Bui and Camille on the oenology and dining side welcomes us in a pleasant and nicely decorated place, with an open kitchen, refined tones and emerald-colored benches.
The menu offers a starter/main course/dessert menu at lunchtime for €35 and a 5-step menu in the evening for €62, with the possibility of adding an aperitif for €14 and a cheese plate for €12. Bottles and/or glasses of wine are also offered. I personally went there for dinner.
Chef Mathieu is very creative, respectful of seasonal products, with a menu that changes every week. His cuisine is inspired by Mediterranean flavors, quite vegetal and subtly spicy, where the broths and foams enhance the dishes. Do not hesitate to also ask Camille for advice on the wine side, Ourea offers organic and bio-dynamic wines.
The culinary journey begins with green asparagus and chard, flavored with tahini yogurt and wild garlic sabayon. This first starter is melt in the mouth and very well served. We continue with vegetable ravioli with turnip and mushrooms with XO sauce, it is a spicy seafood sauce, Nduja, a spicy Italian port sausage, a peanut condiment and tempura of sisho leaves .
Next, the first course is a flame-roasted Mediterranean pelamide fillet, extremely well cooked, just half-cooked, accompanied by smoked potatoes, green juice seaweed and clams. As someone who doesn't usually like clams, I really enjoyed it. On the earthy side, the second dish comforts us with low-temperature cooking of free-range pig, carrot puree and fennel fondue, snow peas, virgin capers, olives and lemon. The broth was delicious, the pig skin crispy and very delicious.
To finish, the dessert couldn't be better in my opinion, a soft brioche with orange blossom cream and almond sorbet, served with thin slices of kiwi. The sorbet was incredible, the cream light and the different textures perfect in the mouth.
Do not hesitate to reserve your table here. The restaurant is almost full every evening.
